A homogenizer is a dairy processing machine that is used to process milk under high pressure to reduce the fat globules to avoid or decrease the formation of a cream layer on a dairy product. Homogenization is a process that is used to achieve consistency in the look and taste of the milk by reducing the fat globules. Homogenization gives the milk a smooth texture and good-looking white color while dispersing the fat globules evenly throughout the milk. Milk that is not homogenized contains a layer of cream and doesn’t look or taste good. Homogenization can be done by homogenizer through single stage or double stage by pumping milk through small openings under very high pressure.
